Kujit Masala Recipe

Pomphret Kujit

Ingredients

  • 3 tbsp. EIC Kujit masala
  • Milk of 1 coconut
  • 7 light green chillies
  • 1 inch ginger
  • 8 garlic flakes
  • ½ kg fish (pomphret)
  • 1 cup chopped coriander
  • 4-5 slit green chillies
  • 2 tbsp vinegar
  • Salt as per taste
  • 2-3 cups water (as required)
  • 4 tbsp. oil

Method

  • Wash the fish and pat dry. Marinate with 1 tsp salt and 1 tbsp. vinegar. Set aside
  • Grind to a fine paste – green chillies, ginger, garlic and coriander
  • Extract milk of 1 coconut
  • Heat oil in a vessel. Add the slit chillies, fry for a minute and set aide.
  • Add onions to the oil and fry till golden brown.
  • Now add the green paste and fry till oil separates.
  • Add EIC Kujit masala, salt and sauté for a minute
  • Add fresh coconut milk, water and the remaining 1 tbsp. vinegar.
  • Bring to a boil and add the marinated fish, fried chillies and boil till the fish cooks.
  • Serve with steamed rice/ East Indian hand breads

Pan kanji (oil-free)

Ingredients

  • 3 tsp. ghee
  • 5 garlic flakes crushed
  • 2-3 kokum
  • 3 tbsp. EIC Kujit masala
  • 1 tsp. salt
  • 2-3 cups water

Ground paste of:

  • 3 green chillies/ ½ tsp. black pepper
  • ½ cup dry coconut

Method

  • Heat ghee in a vessel, fry garlic till golden brown.
  • Add the ground coconut & chillies or black pepper.
  • Add EIC Kujit masala, Kokum, salt and sauté
  • Then add the water and prepare a simple gravy
  • Let it boil for 5 mins & turn off the heat.
  • This gravy is good for children and lactating mothers.
  • It can be served with steamed rice or East Indian hand breads
